I finally have time to update my blog!!
The last few months have been a little bit ridiculous with school and work, so I haven’t really had any time to cook anything interesting and I definitely have not had any time to blog. Work is calming down and spring quarter is coming to an end, which means I can now cook to my heart’s content!
As with most recipes, I’ve been meaning to make banana bread since last year. I bought a loaf pan and I was so excited to try out this recipe, but I got distracted with life. Then last week I bought a bunch of bananas and never got around to eating them, so now I have a whole bunch of them that are way too ripe to eat on their own. So I decided to make banana bread!
I added chocolate chips because I love chocolate, but you could add walnuts (I didn’t because I’m allergic) or whatever other mix-ins that you like. I also used a combination of butter and applesauce to moisten the bread, but you can just use 1/2 cup of butter if you want to be indulgent or 1/2 cup of applesauce if you want to be healthy. My roommates always give me crap for substituting applesauce for butter, so I was a good roomie by compromising and using half of each.
It’s a super easy recipe, so give it a try! I may try to make them next time in muffin form 🙂
Combine dry ingredients.
Cream together sugar, butter, and applesauce.
Add eggs and mashed bananas.
Stir banana mixture into flour mixture, just enough to moisten it. Fold in chocolate chips.
Bake for 60-65 minutes. Allow to sit for 10 minutes then let rest on a cooling rack before slicing.
