Roasted Brussel Sprouts w/ Bacon (and Without)

Happy New Year, everyone!  I hope everyone had a great time with family and friends 🙂

I don’t know about you guys, but the holidays have been nuts so I’m sorry for lagging on posts!  Here is a delayed recipe that I made for Christmas dinner with the fam.  Now I know there are many people out there who are convinced that they hate Brussel sprouts, but I implore you to give it a chance!  I was even able to get my brother, who hates veggies, to admit that he liked the ones I made.  Maybe it’s because I used bacon…

So the fam loves bacon and I do not.  I made two versions of these Brussel sprouts, one with and one without bacon, so you can choose which one you prefer.

Give it a try and you will love it!

Roasted Brussel Sprouts (w/ Bacon)

3 slices of bacon, diced
1/2 lb Brussel sprouts, halved
2-3 tbsp oil (vegetable, canola, or olive)
3-4 cloves of garlic, sliced
salt and pepper

  1. Preheat oven at 425 degrees F.  Saute bacon on medium-high heat until cooked then remove bacon bits with a slotted spoon. Add oil to the bacon grease. Spread Brussel sprouts on a cookie sheet and toss in bacon grease and oil mixture, salt, and pepper.  Roast for 15 minutes then add garlic and toss to distribute.  Roast for another 15 minutes then remove from oven. Toss in bacon bits and serve.

1/2 lb Brussel sprouts, halved
1/3 cup oil (vegetable, canola, or olive)
3-4 cloves of garlic, sliced
salt and pepper

  1. Preheat oven at 425 degrees F.  Spread Brussel sprouts on a cookie sheet and toss in oil, salt, and pepper.  Roast for 15 minutes then add garlic and toss to distribute.  Roast for another 15 minutes then remove from oven and serve.
