Pumpkin Chocolate Chip Cookies

First and foremost, I want to give a special thanks to my good friend and former college roommate for helping me make these cookies 🙂

So in the spirit of season, I present you with a recipe that incorporates the best (or at least what I consider the best) of Halloween: pumpkin and chocolate.  I thought about going more Halloween-y, but all the recipes I found were a little cheesy (figuratively, not literally) so I decided to just go with a cookie.

Now just as a disclaimer, these cookies are pretty cake-like.  They aren’t like sugar cookies that are hard and bake flat nor are they like drop cookies (e.g., chocolate chip cookies) that melts into a flat shape.  For these cookies, the way you put them onto the cookie sheet is pretty much the shape they’re going to have when they come out of the oven.  I opted for the round, perfectly shaped cookies, but my friend made hers a little more messy for a homemade look to them (I put up pictures of both versions below).  You can also make them into whatever size you want–I was just really excited for the new ice cream scooper I bought so I made these kind of large, but you can definitely make them smaller.  You can add walnuts or extra chocolate chips, too.  I just didn’t because I’m allergic to walnuts and I thought too many chocolate chips would take away from the pumpkin flavor of the cookies.

I also made mine with applesauce in place of oil or butter just to make it healthier, but you can definitely substitute with the same amount of one of those or shortening.  I honestly don’t think the applesauce takes away from the texture or the flavor very much because the pumpkin and spices are pretty strong, but I know there are some people who really love their butter.

These are perfect to make for fall and even through winter and they make awesome gifts (if you haven’t eaten them all up already and you are willing to share them).  I recommend storing them in an air-tight container in the fridge and eating them cold or warmed up in the microwave for a few seconds.  Make sure to enjoy them with a nice glass of milk!

Pumpkin Chocolate Chip Cookies

(makes about 2 dozen cookies)

1/2 cup unsweetened apple sauce
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tbsp vanilla extract
1 tsp milk
1 cup canned pumpkin puree
2 cups all-purpose flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
3 tsp Pumpkin Pie Spice
1-1/2 cup semisweet chocolate chips

  1. Combine pumpkin, brown sugar, white sugar, unsweetened applesauce, vanilla, and egg.
  2. In a separate bowl, stir together flour, baking powder, ground cinnamon, Pumpkin Pie Spice, and salt. Dissolve the baking soda with the milk and stir in.
  3. Add flour mixture to pumpkin mixture and mix well.  Add chocolate chips.
  4. Drop by spoonful on greased or lined cookie sheet and bake at 375 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm (I baked mine for about 15 minutes because they were kind of big–about 3 inches in diameter).
