Dipping Fish Sauce

*WARNING*  DO NOT SPILL FISH SAUCE.  IT WILL REEK SO BAD AND CLEAN UP IS NOT EASY.

My mom has this magical, unhuman way of being able to make this without measuring anything.  I’ve been struggling for years to figure out how she does it, but I’ve resorted to looking up recipes and adjusting them to fit my taste.  Here’s what I’ve finally come up with:

Dipping Fish Sauce (Nước Chấm)

1/2 cup of water
3 tbsp fish sauce
3 tbsp lime juice
3 tbsp sugar
2 cloves of garlic, finely minced
1 thai chili or 1 tsp garlic chili sauce (optional)

  1. I like to mix all my ingredients in a cleaned out glass pasta sauce jar.  Add all the ingredients into the jar and mix well with a long spoon.  It will taste best if you wait at least a day for the flavors to meld.  Before you scoop some out, make sure to stir it so that you can get all the garlic and chili goodness.
